Imagine a gourmet dinner on a quiet beach, a hilltop overlooking the bay, or a private dock at sunset, with no restaurant in sight. On Sint Maarten and Saint Martin, that is now possible, thanks to a tall Dutch chef and his remarkable truck.

Chef Olav, the culinary force behind The One Love Ingredient, has built a complete gourmet kitchen into a brand-new, roomy diesel truck. Wherever the truck can reach, Olav can open his restaurant.

A Dutchman with a King's Name

Visitors who meet Olav for the first time often ask about the spelling. In the Netherlands, the name is usually written "Olaf." But Olav is a quarter Norwegian, and he was named after King Olav of Norway. The royal "v" stuck.

Olav has spent more than a decade cooking for vacation guests and local food lovers in Curaçao and St. Maarten. His style is world fusion, shaped by years in the Caribbean, travels through Asia, Africa, and Latin America, and his Dutch roots.

A Restaurant That Needs No Plug

The heart of the project is the truck itself. Olav took a new diesel truck and converted it into a fully equipped gourmet kitchen, designed around the way he cooks.

What sets it apart is that it is completely self-contained. The truck needs no connection to electricity, water, or gas. Olav can park on a beach, at a villa without a suitable kitchen, at a remote event site, or beside a yacht at the dock, and start restaurant service right there.

For wedding planners, event organizers, villa managers, and anyone hosting a special occasion, this changes what is possible. The location no longer has to fit the kitchen. The kitchen comes to the location.

One Island, Two Licenses

Anyone who has organized an event on our island knows that the border can complicate things. Olav has taken care of that: he is food-licensed on both the Dutch side, Sint Maarten, and the French side, Saint Martin.

That means one chef and one truck can serve guests in Maho or Marigot, Philipsburg or Grand Case, Oyster Pond or Orient Bay.

Booking Chef Olav

Olav also offers in-home private chef service for groups of up to 24, in vacation villas, private residences, and aboard yachts. Bookings should be made at least 48 hours in advance.
